Best Lasagna “Ev-ay” – Darms

Last night I made the best lasagna.  Instead of sauce I use crushed, canned tomatoes, layered with whole wheat lasagna noodles and a mixture of: eggplant, zucchini, mushrooms, garlic, a defrosted box of summer squash, olive oil, and reduced fat ricotta.  Oh and reduced fat mozz on top. It yielded 12 pieces, kind of small.  I ate two last night.
